Some beef plate short ribs in "da house". Getting close. They're up to 195, smoker currently sitting at 250

And I am by myself tonight Wife is in downtown chitown with her sister who's in from FLA for a trade show. I'm gonna eat one for my supper, then freeze them individually in vacuum bags. I have to do another brisket because I want to lay in a supply of Q for the "off season". So, sometime soon I'm gonna do a couple half pork shoulders I've got frozen and get a large brisket then lay all that in, with my vacuum sealer.

It absolutely was. I've got the remaining 3 ribs vacuum sealed and they'll go in the freezer

My wife made a pizza from scratch and I burned it on the grill not paying attention. So I helped her make another one and grilled it to perfection like I normally do. Then I ate the burnt one lol.

I need to now determine when I can do those butts and another brisket, plus I still need to get to MN to get my guitar amongst so many other things coming up here. UGH
