Hello all! This question's probably been asked a million times already but since I'm new to this Forum I thought I'd toss this subject out there for some opinions. My neighbor brought over some apple wood from a tree he'd cut down ten years ago. It wasn't rotten but definitely looked like it had been sitting in the sun a long time. Gray in color and definitely well dried. Can a wood lose it's flavor characteristics over time??? I haven't cut it yet to see how it looks inside. Each piece is about four feet long by ten inches thick. Also I cut down some small oak trees a couple years back and just stacked em by the house. Anyone burned straight wood in their WSM like the pros do with their big smokers?? And if I do use this oak should I remove the bark?? Thanks for any info! I'm a new owner of a WSM 22 and have already cooked a couple batches of amazing ribs and chicken with cherry and apple!! Put's the Bradley I had to shame!! Nothing like real wood!!!
