Thanks Bob, yes I've seen the thread. It looks like alot of fun but the entry fee is kinda steep for me. I'll be doing smoke on the mountain april 20-21 here in SJ and santa clara in june. Just trying to keep it local for now

I broke in the craigslist score by doing some chicken thighs

Removed the skin

Here they are rubbed down and ready to hit the smoker. The bottom 3 I removed the bone, stuffed with pepper jack cheese, onions, jalapenos and wrapped in bacon (got that idea from someone on this forum )

On the smoker using apple/pecan wood chunks

Sorry I dont have any of the after pics, family was hungry and we grubbed. Those bacon wrapped thighs were the bomb. Thanks for looking

LOL metallic trees! Smoke on the mountain will be my 1st time going up against the big boys of the CBBQA so as long as I dont come in last, I'll be happy It's gonna be nice to finally put a face to the names from the forums.
