Country Style Ribs - aka CSR's

How do you eat them? I was thinking either you could just tear into them or pull them and make pulled pork, or cook them to 170 and treat them like Pork steaks...

I have two good size ones and only done them once and it was LONG time ago. I normally grind them and make pork sausage with them..
 
I remove most of the fat, cut them into 1" cubes, salt them, brown them & use in Chile Verde. Mas fino!
fwiw - I believe CSRs are pork butt, so you can do a lot of things with them.

You certainly can. We buy ours from Costco and use them for a variety of things. They make great kababs, use them in a pressure cooker, or slow cooker, grill them, do them low and slow for pulled pork that takes a fraction of the time vs. cooking a whole butt, etc.

The ones from Costco are about the best I've seen. They do cost a little more than other places but they are worth it since the quality is so much better. Not much fat to trim off, etc.
 
Depends if there cut from the shoulder ( butt ) or towards the loin.
Loin cut CSR's treat them like pork chops. Cuts from the shoulder are similar to pork steaks and you can go a bunch of different ways.

Real CSR comes from the loin back I think. We always slash with Dales steak marinade and let them sit for about a hour or so then grill them like a steak...no sauce. ....Poor mans steak....fooled quite a few down through the years.
