Country Hams


 
I just tried to secure a fresh ham here. Boy, the market is SLIM. I can get one, but it comes without the rind. Wanted a shank, he said he would try to see what he could do, and I was supposed to call his boss on Saturday. Boy, why is this such a hard item to even 'special' order?
 
I retired from the University of Illinois, a land grant school. They had an agriculture department that had a meat outlet for meat that was butchered as part of the ag curriculum.

In particular, they had great fresh ham. I smoked a couple on my old Brinkman and I wish I could do it now on my WSM, but we now live in beautiful Utah.

If you are close to a land grant U, check with the Ag department. UofI also had great lamb...tom
