Cottage Cheese Muffins

Want something a little different for breakfast? DH made these this morning. This time he only made 1/2 recipe, but we think it would come out better making the whole recipe. Still, enjoyed them and very tasty and different.

Cottage Cheese Muffins

1 lb. small curd cottage cheese
2 TB. sour cream
1/4 cup sugar
4 eggs
1/2 cup biscuit mix
1 tsp. vanilla

1. Beat all the ingredients except the eggs until smooth, either in a blender or a food processor. Add the eggs one at a time and continue beating until smooth.
2. Pour the batter into well-greased muffin tins until the cups are 3/4 full. Bake at 350F for 45-50 minutes. Yield: 12 to 15 muffins
