I bought some Australian lamb chops since the butcher at my local Costco told me they sold out of Australian
rack of lamb. < BOO
When i got home everything i read online said to cook the lamb chops on the BBQ as the smoker would
dry them out because they are small and you don't want to cook them very long.
But since i was doing a beer can chicken on the WSM anyway i said what the heck.
I put the chicken on the WSM.
Let the Lamb get to room temp and the seasoned them with
K-salt, Black pepper, and a Basil citrus rub.
After the chicken was on the WSM for about 2 hours its was time to get on the lamb chops going.
After about an hour i checked the chicken and chops.
The chicken was stubborn trying to get it to an IT OF 165* but being almost 6LBS i understand.
I pulled the chops after about 90 minutes and let them rest while the chicken did its thing.
The chops came out very moist and tasty.
