Costco Brisket Flats

My nearest Costco only has flats. I noticed that they still had the fat cap on. Anyone had any success only smoking a Costco flat?
 
I've done 3 high heat and have really liked the results. All have been around 6.75 lbs with nice fat caps and even thickness. I kind of enjoy getting a little point meat with my slices so I'm happy with what Costco has to offer.
 
Flats are all I do Luis, except mine are from Sam's Club, not Costco. I wouldn't think there would be any difference.

Basic high heat cook, they turn out anywhere from good to excellent.

Luis-I've only ever done one brisket and it was a 5 or so lb flat from Costco, similar to what you describe. I used the HH version exactly as Scottthegrillinfool describes in one of his posts in the Photo section. It did not turn out well (nowhere near tender enough).

I can't say for sure what portion of this was my fault-may have even been entirely my fault-but I do know that feedback I got in my HH Brisket Diagnosis Request in the bbq section was nearly unanimous: learn brisket with a packer. Obviously there are at least two people right here on this thread who can do flats just fine, but dang near everyone on that thread, that I recall, strongly suggested going with the packer. Way more forgiving, especially on a HH cook.

Just my 1/2 cent of advice/feedback
 
Thanks everyone. I picked up a 6.2lb flat with the cap still on. I'm going to put it on the top grate and put it fat cap down. I'll post pictures tomorrow.

How'd it go?

My Sam's always has good selection of flats, not so great selection for packers.

For my first HH brisket, I wanted to do a packer but the flats have been tempting me.
 
I went to Costco last night and their flats were just that. Skinny little flats that I would not waste my time & $ on. A 2 pack of butts were $30 or more. I almost threw my card away.
 
Interestingly enough, I went to my local costco today and found the same issue...pricey butts and tiny little completely trimmed flats. Bummer.
 
I have seen some real nice flats at costco but never have seen a full packer. I may just let my membership die out and go back to Sams.
 
Agree a little pricey at Costco, however at least in CA they are Choice so that alone is a price bump over Select and 2nd they are trimmed.

As compared to a Select 10 lb Packer that's with 3 lbs of fat the price per meat (defatted) is similar.

May want to ask the butcher if they can leave the fat cap on for you.

Pork butts/meat prices are up on the west coast as well.
 
I just did two flats from COSTCO which turned out pretty good. Although, I was able to get a bigger flat from albertsons that was really good too.

All were cooked low and slow. Albertsons was 7 lbs and COSTCOs were 4 lbs each. I think I prefer albertsons.
 
Not to hijack the thread, but yesterday had some Choice Flap Meat from Costco and was some of the best beef I've had recently. Much more tender than tri tip or brisket.

Was braised (beef broth maybe) at 350 to a temp of about 140..
 
A few weeks ago my Daughter and I were at Costco and she looked at the butts in the case, shook her head and said "man, I miss swine flu; the pork was so much cheaper then!"

Love that gal!
