did not work out, of course I had no idea what I was doing anyway.
Picked these up today and I’m thinking hot and fast to about 140-145.
Should I smoke em low and slow?

Apparently Costco's importing short ribs from south of the equator...;)

Since they look to be decently marbled you could always butterfly, marinate and grill them bulgogi-style.
 
I’m going to cook one for lunch hot and fast just to get an idea of what that’s like.
I froze the rest and I’m thinking of doing some fake burnt ends when the rain is gone.
 
Not bad, not amazing. Hope they come out better as burnt ends!
Yeah, I think short ribs typically are a low/slow kinda thing.....LONG braise, LONG smoke, etc. I would do a combo with the leftovers doing a long, smoked braise (since the ribs are boneless, and separated.) Or, you could just do your faux burnt ends plan, that would work! :)
