Just saw your post yesterday Robert. Your hens look great. It's been a few years since I cooked Cornish Hens. I used to stuff them with Newfoundland Savoury Dressing and do them in the roast pan. You have given me some great ideas. The brine sounds good although for me, I might be inclined to do what you did with a compund butter & herb injection.
