Hi guys,
Going to fix brisket & pulled pork Sunday. Brisket weighs about 10 lbs, 2 pork roast weigh about 13 lbs. Did one brisket took about 12 hrs. Did another pork it took 12 hrs also. In the high altitude. I was figuring it would take about 15-17 hrs for what I am doing Sunday. Not going to use no water, just foil the pan. As you guys say that is the way to go. Would like to have meat done by 10:00-11:00 Sunday morning. Will start Sat. eve. Am I figuring enough hours. Would love to here your opinions on this. Keep Smoking!
