Cooking Temperatures

Why is everyone SO hung up on cooking at an exact temerature? If the temp is kept within a RANGE of 225 to 275 life is good. The meat is cooking. The cologens in the meat are breaking down. The fat is rendering out.
Remember every animal is different so no 2 pieces of meat cook exactly the same. If you hit a plateau for 3 hours instead of 2 hours have another beer, scotch, or soda cause dinner is going to be late. Talk with your friends and family. Relax!
This is BBQ, not mathmatics! There are variables so go with them and don't fight them.
Relax, enjoy, this is BBQ and it is supposed to be fun

Thanks for the correction. I was on the right track but about 25 degrees low, as I was happy with 200~250.
I think you left out something about enjoying a good cigar /infopop/emoticons/icon_biggrin.gif
