I am planning on smoking an 8 lb butt and about a 10 lb brisket this weekend. I have an 18.5 WSM and I dont think both will fit on 1 cooking grate. If I put the butt on the top grate and the brisket on the bottom, are the drippings from the pork gonna flavor the beef? Should I put the brisket on top or vice-versa? Suggestions or advice??

Quantity-wise, you will have more drippings from the butt, but if your rubs are the same on each, you shouldn't notice a huge infusion of flavor no matter what order you stack them in. At least I don't think anyway!
 
"Butt over brisket" is a style that's been around a long time. The pork drippings act as a baste for the beef.
 
I combine meatson thedifferentlevelsall the timeandlovetheresults. As mentioned the butts onetworksgreat. I love to put a pot of beans under the butts.
