cooking prime briskets


 
If anyone is interested (and just for the helluvit) I put together pics of four ribeyes with the top four marbling catagories. Remember, the actual quality grade would be determined by assessing maturity first, then assessing marbling, then putting the two together. The pic is here.

The truth of the matter is I'm in the process of finding that special butcher. One that'll understand what I'm asking for, will make the effort to get it for me, and still give it to me at a reasonable price. Because of this thread/string I'm going to have a lot more confidence and knowledge when the interviewing process begins. My current prospect is called, Hansen Packing Co. Their slogan: "You Can't Beat Our Meats" and they're home of the Good Buddy Bratwurst! At least they have a sense of humor.
