put the 13lbs pork butt on 18"WSM at 11pm last night - dome temperature at 225F before i went to bed. Woke up at 6:30 this morning and dome temperature is at 300F. Put a thermometer in meet - 205F. Is it done after 8hrs? Used MM/fuel is hard briquets from Trader Joes. Guess hotter than Kingsford.
