cooked prok butt too hot

put the 13lbs pork butt on 18"WSM at 11pm last night - dome temperature at 225F before i went to bed. Woke up at 6:30 this morning and dome temperature is at 300F. Put a thermometer in meet - 205F. Is it done after 8hrs? Used MM/fuel is hard briquets from Trader Joes. Guess hotter than Kingsford.

It's probably done if you don't have it in foil. Did the probe slide in easily when you checked the temperature? If so it's done.

yes it slid easily. This is the first time my overnight smoking climbed to 300F

if it slid in like butter in a few areas i would consider it done

Kind of late for this comment but you may find a little more fat left in the butt since it hasn't had as much time to render everything out.
