Cook Times

I'm going to be smoking my first set of pork butts this year tomorrow and I usually do just one pork butt.

Since I'm cooking for friends, I need to add a 2nd pork butt. It's been a long time since I've done multiples.

I generally cook at 225 to 250 and my butts are 8lbs each.

How much time should I give to smoke these two butts in my WSM?

I would personally give 16 hours. You probably won't need that long but aat least you can be confident they'll be done and you can store them for a fairly long time with minimal heat loss when they are done.

Hey Craig, Id go about 1-1/2 hours per pound. Do not let them touch each other either. Go with 8 lbs. X 1-1/2 bring you to 12...thats roughly where youll be at...I usually take em to 190 or 195 and start checking for tenderness with the thermometer and when it slides in with very little resistance pullit and wrap it then ito a cooler or micro to let sit for an hour or 2. Just my .02

I didnt mean to "quote" that.....sorry im a noob.

Also, I know you have 2 butts. You still go with 8 lbs. not 16 lbs. from what ive been tought, if you stack them you could use the 16 but if they are not touchin' go with the 8. I hope this doesnt confuse you. You could have 4 - 8 lb. butts and it still goes for roughly the 12 hour cook process.
