cook time for 6.5 lb shoulder

I am going to try an overnight cook this weekend on a 6.5 pork shoulder. I usually cook at 250, but will try to lower that to 225. I will try using the sand method and probably will put on around 10pm. How long does a 6.5 shoulder at 225 usually take and if I'm done early, how long can you generally keep it wrapped in foil?
 
I've held butts in a cooler for 5 hours. I line with towels, wrap the butt in heavy duty foil, wrap butt in towel place in cooler and lay towels on top. Close and don't open until you're ready to pull.
 
I did two a few weeks back: one at 6lbs, other at 7lbs. Pulled both together after about 14-15 hours. Temps were kept low. I kept them in a cooler for a few hours no problem.

One thing I found, when I woke up in the morning (well, after a long 3 hour nap, really), I got nervous they were going to be done too soon, temps had gotten as high as 275 at points during the night (maybe for a couple hours...I was asleep). I pulled temps back and sat at or _below_ 225 for the rest of the morning and they finished perfectly.
