I have an old Genesis Propane BBQ that we've replaced the parts in a couple of times over the last 18 years or so. We finally replaced it last year but I still have it.
Rather than purchase a smoker I am considering converting it to a charcoal smoker. Has anyone done this?
I gutted it so all I have left is the shell, the bottom pan and the grates.
I have rigged an old rack from a small portable BBQ in the bottom to place the charcoal. I have another grate I can cut and position above that to place a water bowl.
The holes in the side where the burners used to be can act as bottom vents.
I assume I need to cut some vents in the top?
Any suggestions? Or should I just go buy a WSM?
One question - how much vertical separation should there be between the charcoal and the water bowl and then between the water bowl and the top grates for the meat?
