Computerless...but the Kettle Still Works Fine!

I've been MIA a few weeks now, and missing following everyones cooks and posting my own. Apparently, an entire glass of red wine should NOT be poured onto a computer...just in case anyone wasn't sure. :-) Here are some pics from recent cooks I couldn't post.

For Smoke Day I did a 4lb roast injected with an assortment of goodies. I also did a hock just for fun.

First hock I've ever done. This can be a tough cut as it's a "working" muscle, but i got a lot of it super tender. Delicious, even with a few tough pieces in there.

Despite injection, had some dryer spots I wasnt too happy about, but overall, very tasty.

Can't really complain when you can do this with your fingers.

Butterflied a 2lb roast to stuff and roll like a tenderloin. Stuffed with goat cheese (fresh off same farm as pig), Italian seasonings, and sliced tomatoes. Rolled it and tied it back up. Seared on CI then indirect on gasser for about another hour. This was delicious! I will definitely be using this stuffing ingredients again.

Looks a little rare, but it reached temp. I coulda taken it longer, and it still would have been juicy and tender.

Nice cooks, everything looks really good Luke. I can tell you from experience that computers don't much care for white wine ether.
 
Losing a glass of wine AND la computer. That is tragic. Great pics Luke. Glad you're back.
 
Everything looks delicious but that roll is tops. That sure wasn't a good way to use wine, I'd rather drink it myself. I make sure when Rich is on the computer there is NO wine in the office in less I'm drinking it.
