Scott, dunno if you are still following this thread, but I know that there is a BBQ class being held at the University of Minnesota on March, 30th this year. Check out the link at the Minnesota BBQ Society website. Not a member myself yet, but looks like a pretty good class.

Might look at Rod Gray's Pellet Envy class as well - I don't think I've seen it mentioned, and everyone I know that has attended has been very pleased, based on their competition results after the class.
