What is the key to getting a smoked Turkey either a mahogany or golden yellow color for a finished /smoked bird! I have been doing wet brines but struggled to get either of these colors.
thank you for the advice!Personally it depends on the smokewood. Cherry gives a nice red or mahogany color, Alder or Hickory gives a more brown color.
Apple, peach, beech, maple you get that blond color
I wet brine my turkeys too.
