College football, beer & a High heat butt

I love my WSM. Woke up a little late this morning. Ran outside. Filled up my chimney with Kingsford Competition (never used it before). While it started up, I loaded the ring about 2/3 full of B&B hardwood and a couple huge Pecan chunks. Never tried Pecan on pulled pork. Hopefully it will taste ok.

Only took the smoker about 5 minutes to rise to 330, even though it's 40 out. Guess that's what happens when you light of a full chimney, LOL!

Threw the shoulder on that had been trimmed from 9.2 to 7lb last night and rubbed with Stubbs Dry Rub.

Butt's been on since about 8:20. Closed the door and the WSM is holding steady at 310 lid.

I'll update later. Need this thing off by 12:30, so it can rest for an hour and pull. Bride wants pulled pork at 2pm.

Yeah. I was surprised. It's a small butt. The wife bought it and paid a lot for a bunch of hide and fat! Only has to feed 6 adults and a couple kids. Looking forward to having some pulled pork sandwiches this afternoon.

2 hours in. all vents open. Lid temp still pegged at 310. Better put a probe in soon.

What a nice day. Sitting on the front porch watching my girls ride bike/scooters. Feet propped up surfing the VWB forums. Football starting.
