My wife found a recipe for Cornbread and Chorizo Strata in the paper. It sounded delicious so she decided to make it. I love to grill cornbread and she loves it too so that was going to be my contribution. I did a post a while back of my cornbread wedges in my cast iron segmented pan. Did a different recipe this time and did the cornbread in my square cast iron pan. One note, we couldn't find any cured Chorizo so we substituted with some nice Linguica. The recipe came out very good. The cornbread is layered in along with the Chorizo (Linguica for us) some grated Monterey Jack, one can of green chilis, corn, scallions, plum tomatoes, eggs and finished off with 3 1/2 cups of milk. Here are a few of the pic's.
Some corn for the cornbread. I love to grill corn this way and then shave the kernels off for the casserole. Also used roasted red bell pepper for that too but no pic.

Cornbread done. This is called Skillet Cornbread and is a Weber Recipe and I believe it is in the Big Book. For sure it is on Weber's On the Grill App.

Here is the completed casserole ready for oven.

Well, that's all the pictures. I wish I had one when it came out of the oven. I'd like to tell you that the lack of a finishing picture was due to camera malfunction but the truth is I got caught up in the Giants game and didn't come out in time for the picture. It was absolutely beautiful and tasted out of this world. Thanks again for looking
