Hay guys im pretty new with my 22.5in wsm and im going to be doing my 2nd cook on it tonight and its an 8lb butt. Its going to be cold here in wisconsin { around 7 degrees with 4mph wind } tonight and I was thinking about putting the butt on around 2am and was wondering with it being this cold will a full ring of kingsford get me through the cook or will i have to add some charcoal ? Im guessing 9-11 hour cook? Im running a digiq DX2 by the way if that helps. Any info would be great and thank you in advance.

Cold won't bother you what will get you is wind. If possible make a wind break, in my experience (there are far more experienced people then me on here) wind eats up your fuel.

Sounds like fun, but 2am? Jeez I usually wake up at 3am, 4am butts are more my style.:wsm:

Agree with Tim. 2am is early unless you plan to eat really early tomorrow. You should be fine with your fuel.

foiling and stuffing the butt in a room temp cooler for hours is cool....
i'm tellin' ya scooter, you're good to go with your plan.
and have a brew or two at two AM ;)

thank for the info guys. The reason for starting so early is i have stuff to do tomorrow and was gonna foil and put it in a cooler and take it with me to the inlaws house for lunch. Now its 11:15 and im gonna start earlier cause i dont feel like going to bed and getting up in a few hours to start. So i have about 15 coals in the chimney warming up so hopefully the butt is on by 11:45 and i can be in bed dreaming of good eats by 1 or so.. I hope lol. Once again thank you all for the help and goodnight.

Jesus, the thought alone of waking up at 2/3/4am for a cook makes me tired. The earliest I've managed is 6am and it still took me 30 mins to get out of bed.

Well I got the butt on at midnight and im glad i did cause its 9am now and its just getting over the stall spot of 168 for the last 2.5 hours and i just hope its done by noon so we can eat.

Geez I missed the last few post's. ( I forgot about this thread... Senior moment LOl )
So how'd it turn out?

Well its not even done yet. The maverick is showing 190 now and I'm just sitting here waiting with a cold one in my hand. Its been almost 15 hours. I will let you all know how it turns out

Scooter, first of all, welcome to the forum. So what time did it finally finish?

You didn't say what temp you cooked at but I find 265-275 to be about right for me with pork.
If you have this problem again and you are getting close to the time you want to be done, you can always wrap in foil which will speed up the cook.

Always plan for 2 hours per pound for a safety margin so you leave yourself enough time. As everyone said, if you get done early, you can wrap in foil, put in a cooler and put some towels on top and it will stay warm for hours
