Cold Temp Cooking

Planning to smoke a 14 lb bird on Thanks Giving and suspect there will be outside temps in the 30 to 40 degree range. I was planning to cook at temps around 250 to 275 and thought I'd use the minion method. Is minion method doable in such cold temps or should I go with standard?

Minion Method will be fine, as long as it's not windy. The cold temp isn't so much the problem as it's the wind. You may want to start with more hot coals that you might normally, just for good measure.

OK, I'll bite: what if it is a bit windy? Its looking to be about 32 here, prolly some rain, and an 11mph breeze. Who needs the thermal underwear the most - me or the R2 unit?

What Gary said. :) Sheltered patio, carport, behind a big SUV, behind a big Weber gas grill, behind a sheet of plywood, etc.

I wasn't planning on using a water pan but will if that's the way to go.
If you feel confident in controlling the temp of your WSM without water in the pan, you can go with an empty, foil lined pan or no pan at all. Otherwise, use the pan with water.
