Cola chicken, 'shrooms, & corn

Tried to do something different with bscb's.
Pounded 4 breast to an even thickness, and marinated them in Coca Cola, soy sauce, minced garlic, lemon juice, and raw sugar for about 2.5 hrs.
Spinach leaves and cheddar spread cheese for a filler.

Seasoned with Montreal Chicken Seasoning.
Silicone bands used to try to keep the cheese inside (Fail!)

Ernie D style mushrooms except I just smeared mayo on them, rolled in cruton crumbs, and seasoned with Penzey's BBQ 3000.

Buttered corn sprinkled with Penzey's Northwoods, and Sriracha sauce on the pretty much cheese-less chicken.

The corn, for this time of year, was much better than expected.
Mushrooms were great, and the chicken pretty good but not great.
It was tender and moist, and I think if the cheese had not melted out it would have been better.
Next time I'll use solid cheddar, and flatten the breasts more.

Bob, That dish has summer written all over it and as soon as I regain power I will try something like that but when the house is 39 degrees it's your dish that is keeping me warm.
 
Well you through me off with the spreadable cheddar but a good idea. To help keep the cheese in cut a pocket in the breast, stuff it thin pin it together with tooth picks. Grill indirect with the slice on top. Great looking plate Bob
 
Really beautiful Bob. Where are you guys getting corn on the cob in March? Must be California...? Haven't seen any in the stores here.

Lord have Mercy Bob. All looks Great! I've had some of that "Real" Corn from just across the river. None better!

Looks great Bob! I'm a huge fan of Ernie's shrooms. And a great idea with the chicken. I've really been wanting to try stuffing some breasts. You've inspired me even more.
 
Bob, I love your creativity. That chicken looks perfect and I could eat about 2 dozen of those shrooms. Thanks for sharing!
 
Looks amazing bob! Have to try those shrooms. Sorry to hear bout all that cheese..But still looks spectacular!
