Coconut sugar?

I saw some in the store today (Walmart) and wondered if anyone has used it in a rub, or for baking.
Didn't buy any, since it was over $4 lb.

A search here finds that Harry Soo has tried it, along with many other sugar types, in his rubs.

It looks pretty much like brown sugar, and is not supposed to have a coconut taste.
And is supposed to be less sweet, with a caramel flavor.
 
Hi Bob. I do a fair amount of Asian cooking, and have yet to find coconut sugar in any recipe. Haven't tried it, but I seem to recall seeing it on a shelf somewhere in my travels. I have tried palm sugar (Gula Malaka, or Gula Jala in Malay) -- like any raw, minimally processed sugar, it has a nice light brown sugar/caramel taste. I assume coconut sugar is similar.
 
You might be able to. But coconut sugar's flavor varies depending on its concentration and when and where it was processed.

Coconut sugar is significantly higher in minerals than refined white or brown sugar. It is also a low glycemic food.
