Clay saucer question

Broke down over the weekend and bought a clay saucer. Actually,we were at Garden Ridge and I saw one.

Do I just put it in the water pan and cover everything with foil? My first trial will be this weekend,baby backs! As always,thanks in advance for any and all tips and advice.
 
Hey Phil,

Put 2 layers on the bottom and 2 over the top of the clay then double foil the top of the water pan and make sure to leave it dished in 1-2 inches.

What size clay and which WSM do you have?
 
My best advice on your first run would be to start with only a small amount of lit and catch on the way up. Better to learn how it reacts then to fight to bring the temps down.
Trust me... it's a nightmare if you let the temp spike as the saucer will hold that higher heat start the yo-yo effect.
 
I take it yours is gonna sit on the top rim of the water pan? I went with the 12.25" clay which sits about halfway down in the water pan.

That's what I meant about how I dish in the top of the foil. I guess your clay will actually catch the drippings.
 
I've been using the 12 incher in my WSM as well. All foiled up it sits nicely in the water pan. I only foil the top of the saucer and tuck the rest underneath. If I could offer one tip, take off the foil once the thing is cooled down and clean off any grease that might have snuck through. If it gets hot & humid, mold might get growing in there and it's just a pain in the rump to clean it up then.
