Clam burger anyone?

Wife and I did some clamming yesterday.
We got a bunch of razor clam.
I just had a clam burger for lunch and it was good.
If you ever get the chance I recommend it .

At first I thought this was going to like a clam cake and I wasn't sure. But fries clam sandwich, yeah that sounds and looks great!
 
Funny story about the clam burger and cooking the clams yesterday.
This was my first time frying clams.
I normally steam, sauté w/pasta, bbq or eat raw.

I had set out 4 different batters, a bowl of egg wash and a frying pan.
Seasoned bread crumbs, flour, Cajun dry batter and panko.
I cooked some of each to see how I liked them.
They all came up short in fact they kinda sucked because they were too bland much like an unseasoned abalone.

The foot portion was to mushy but would work well for chowder.
The neck portion was where it’s at for frying.

The best method was the burger with the onions and all the fixing.
This worked but was still a bit tame.

The daughter and her boyfriend came over and asked for a burger.
so we had them again.

My winning batter
egg wash with 4 heaping squirts of seracha
cajun powder with chili powder, salt, pepper &garlic
Panko with minced onion, Cayenne, Lemmon pepper

dip in Cajun, dip in egg, dip in panko, fry for 50 seconds then flip and fry for 30 seconds more add to a dress burger bun.

These tasted great.
I don’t like lots of heat but this worked fine.
We all agreed better than any store bought burger.
