chuck roll

good morning all,

so, the Sox are still in it and I was thinking of having some friends over tomorrow night to watch the game.

was thinking of smoking up a chuck roll for some shredded beef tacos.

unfortunately I have plans tonight so I won't be able to do an overnight cook til much later than I would want to.

with that said...I was wondering what the rule of thumb is for BBQ'ing a chuck roll?

I'm assuming 1.5 hours per pound? If that's the case I can always look for a smaller piece of meat and start it in the early AM.

any other advice is (always) appreciated...as this would be my first attempt at beef in my WSM!

Jeff,
You're in Salem. Do you get any food at the Hilltop butcher shop? Is it worth a drive up there from Framingham? I don't mind the drive, especially when I can stop at the Kowloon.
On a more serious note, lets hope Mr Schilling can keep the ball in the park. Crossing my toes.

Hey Dave,

No, I've been hearing one too many bad things about the Hilltop for the last few years or so - apparently the quality has gone way down hill...especially since there are tons of other "steak houses" around.

...but man, when I was a kid, I remember the Hilltop being amazing.

That's a good point though, I have never thought about hitting up their butcher shop!

I usually go to my local BJ's...or for local butchers:

- Danvers Butchery opened up a new shop a couple years ago...I'm very impressed
- Can't go wrong with McKinnon's...but they might be lacking in bulkier items
- Butcher Boy in Andover...hands down the best REASONABLE butcher in the area, IMO.

This COULD be Schilling's last game at Fenway in a Sox uniform...you bet your you-know-what he'll be there to pitch his heart out...I have no doubt.

But back to the question at hand...1.5 hours per pound?
I'm only planning on 6-8 people max, so I'm not looking for a 15lb slab of meat

Usually 1-1.25 hrs/lb.
