I Q'd a 17lb chuck roll this weekend. I was expecting around 1hr per pound plus or minus. It reached 195 at 13 hours. I foiled at 165 and my WSM stayed between 225 & 250 for the entire cook. The meat was very good.

This was the first chuck roll for me, so I do not have a frame of reference except posts here. Has anyone else had this happen? Any ideas why it would cook so quickly?

Greg, Never had one cook that fast. Mine cook in the 1 hr - 1hr 15 min per lb range. They say no 2 pieces of meat are the same or cook the same so........ My guess is that it didn't have alot of fat in it and cooked quicker. Glad to hear it came out good for you.

I love chuck done on the smoker.

My first chuck roll was 24 pounds and it took 24 hours to cook. Most of the ones I have done have been 1 hour per pound but I cook around 250°.
