Chuck Roll or Beef Sirloin Tip Roast

I was thinking of doing something new for the weekend. I've never done a the chuck roll or the Sirloin Tip Roast...I saw Jim Minions recipe for the Roast and the Virtual Weber Bullet sight has a recipe for the roll...any advice or thoughts for someone doing either of these cuts for the first time?
 
Also, I just called the butcher to be sure he had both cuts he did but he asked me if I wanted the chuck roll with the bone in...Do I?

No bone, and neck off. Rolls can run on the long side so make sure you don't get one too big. I like to stick with the 15-18 lb ones. I vote you do a Chuckie roll.

it depends on if you want pulled/shredded beef or sliced beef cooked to your degree of doneness. i have done both and i love both. the sirloin tip i smoke to 125 and then foil and rest for a few hours. you get a good variation of medium to medium rare that way. slice it thin and use as a sandwich meat or eat as is. sometimes i save a few of the more rare center pieces and slice them an inch thick and a few nights later will throw them over hot coals just enough to sear the outside and serve as steaks with grilled taters and corn.

the chuck roll you can foil after 160 to quicken cook time, i didn't but i foiled for 3 hours in a cooler to soften the bark some.
 
So I went to the butcher and he showed me the chuck roll--it weighed in at more than 30 lbs...it was huge triangular chunk of meet and looked nothing like the photo on the VWB site. The butcher explained that the narrow end was right up against the ribeye and the long end was against the neck.
Though he offered to cut it down to any size I wanted I was a bit overwhelmed when confronted with a piece of meat that big.

So I bought the tip roast...thanks for all the advice...
