Do to the overwhelming request from my wife I'm doing another Chuck Roll this weekend. Picked up a 18.5 lber at BJ's today. It was the smallest one they had

If you havn't tried one you don't know what your missing. It's a nice change from doing Pork Butts all the time. Going to use the #1 Texas BBQ Rub on this one. I used the # 2 on the last one. And yes the Head Country Hot BBQ Sauce

Love that Stuff. Only one problem it has to do with a Hurricane coming up the coast. Predicting heavy rain and winds here in Pa.

I'd like to try a chuck roll, but I'm not sure where to get one. Has anyone ever asked at Costco if they sell them? I've bought chuck roasts from them so maybe they'd sell a roll.

The Butcher at BJ'S told me that they don't always put them out but if you ask for one they always have them in the cooler. He had some that went up to 30 lbs.

I've been wanting to try one of these, but how big is too big for the WSM grates?

And there's 2 of them bad boys out there

Tnanks,

Bill, they had a 28.8 lber there and no way it would fit without cutting it. I know somebody did a 20 lber a couple of weeks ago. Bryan

Tom,

Maybe one of the wind breaks might help.

I've been in the middle of tornados and typhoons, but never a hurricane. Good luck my friend.

The only silver lining I can think of is that there might be plenty of smoke woods available for the asking.

Forgive me guys......What is a Chuck Roll? I presume it is a type of chuck roast?

Hey Tom, Be careful...Believe me I know what a Hurricane is like...on the bright side, these two storms are not super strong.

Bryan...Are they sold by another name?..I am not sure if I have ever seen such a "cut" before.

This would be a beef shoulder section?

Rath, was the insiration for doing my first chuck roll. Thanks Buddy

Jeff the last one i did was a 14 lber cut in half it took 9 1/2 hrs. I put foil on at 170 degrees and took it to a final temp of 202. It was awsome.

hey Bill, here is a pic of a 20lb chuck roll on the bottom grate. Out of the cryovac it kinda splayed out and was even bigger. I tied it up tight with butcher cord horizontally to pull the sides in from the grate edge. You could probably do bigger as long as it was taller but not much longer or wider.
