The Plan: Beef Roast a la Stogie

Modification: substitute beer for beef broth. Used my LAST BOTTLE of Cave Creek Chile Beer - that's right, the one brewed with a serrano chile in every bottle!

Conditions: Woke up to a dusting of snow. In the 3 hour window between flurries, I fired up the bullet, laid down some alder, loaded the roast and let it go for 2.5 hours. Added an onion, potatoes and parsnips, foiled up and finished in the oven for an additional 3 hours. Snow started again as soon as we got it indoors.

Outcome: perfection. No additional sauce necessary as this turns out with quite a bit of juice on the side which goes well over the roast and veggies. Accompanied by corn bread and green salad. Yum!

Need I state the obvious? Well, I will anyway.

I almost did the same cook yesterday..but had a couple inches, of snow, and am not feeling well, so I did it in a wine sauce. Probably not as good as yours, and I plan to do it like that in a week or so.

Well I tried another chuck roast(2.67 lbs.) yesterday on the kettle at 320 degrees. It reached 170 degrees in about an hour. I wrapped and put it back on until it hit 200 degrees. Took it off and left it wrapped in the foil, put it in the microwave for storgage, micro not on just for storage about 75 minute. Total cookong time was 90 minutes. It was juicy and had a good taste, but was not shredable. How do I get it to be shredable?
 
It would be easier to get shredable if you cooked it slower (i.e. 225 to 250).

Also instead of just pulling it off the cooker once you hit your temperature make sure it feels extremeley tender with a fork (no resistance at all when you put it in).

Hey Sam:

Roast over high heat like 320 will consistently yield tough meat. A roast is definitely a low & slow venture. Witness the many recipes for slow cooker pot roast.
