Chuck Eye Roast for NFL Sunday kickoff!

Howdy folks, I'm planning on a 6 to 8 lb roast on the smoker Saturday night and done for 1:00pm kickoff Sunday. Never done one before, so any advice on cooking procedure would be welcomed. Go Bengals! WHO DEY!!!!!!
 
Kevin has posted a very nice method, which includes a rub and addition of onions and wine reduction when you foil. That recipe is absolutely fantastic, as one would expect. link here

Here is my formula for how long to cook a chuck:

approx cook time @ 250 = 5 + (no. of lbs. X 1.2)

This formula gives you about 2 hours per pound for a large chuck and about 3 hours per pound for a small one.

Good formula. I don't know how accurate it is, but the concept is right on. It can take as much as 3 hours per pound but with a bigger piece of meat, it doesn't take as long per pound.

If you do a search on chuck roast, you will find a link to a chuck roast cooking method by a member named Stogie. That will get you going. It's a great cook. I love chuck roast.
