Hi,

I haven't seen any smoke recipes using the cheaper cuts of beef like chuck or clod roasts.

I'm looking to try one of these and looking for temperature guidelines.
 
Hi Leonard,

There is a reference topic here: Chuck Roll which you can find on the Cooking page at TVWB under the Beef section. They are very good though a bit more pricey usually then pork butts.
 
In addition to the article mentioned by Shawn in his post, there is lots of discussion of chuck roll here on the bulletin board, a close relative to shoulder clod. Click the "Find" button at the top of page and search on "chuck roll" and you'll find lots of results.

Hi Lennard,

I cooked my last chuck a couple of weeks ago. HERE's the thread I started about it. Sorry that there's not a very detailed log of the event but it turned out perfect. I basicallly followed THIS link although mine cooked a bit quicker. Good Luck!!
 
Ive does Stogie's chuck roast and pot roast dinner and have to say the chuck roast is incredible. Definately 3 hours per pound...no more no less.
 
Can someone tell me what other name a "chuck roll"
may go by. I've never seen this name on any meat and I'd like to try one. I frequently see "chuck roasts" but these arn't very fatty and can't be the same thing that people on this forum are talking about.
