Another Christmas meal is gone. We actually had two this year!
My mom and her husband came out noonish and we had a half a turkey and all the sides.

Friends came over about 4:30 with their daughter, SIL and 5 grandkids, which we've always claimed as our own!

They brought a ham and we had all the sides with this meal too!
I didn't get a chance to get a pic of the bigger spread, but I think I'm still stuffed!
Pammi noticed that our newly moved and enlarged grocery store was selling dry aged steaks! I knew that we were going to get one!

Not wanting to mess this steak up, we cooked it in our largest CI skillet, a 12" one that we got from Pammi's momma when she said that she(momma) couldn't lift it any more!
Preheated it in a 400* oven, then added butter and thyme to the skillet on the stove top.

2 minutes per side, then just enough around the edges to brown it nicely!
It then went back into the 400* oven for 8 minutes.

After an 8 minute rest, time to dig in!
No sides, just a $23 steak!
And, it came out perfect! Juicy and tender, with just a hint of funk from the dry aging process!

Next one is getting cooked on the kettle, following those same temps and guide lines!
