Christmas Bacon

MMMMMMMMMMMMM.... Bacon....... That looks amazing. I have been trying for a year. how do you keep the WSM at 165? I cant get mine below 200.

I use a Stoker ATC on a lot of my cooks. Wasn't sure how well it would work with the low target temp but it held very steady. Without an ATC, I'd think you might close two of the bottom vents completely, and leave the third one open just slightly. That would simulate how things are set with the ATC. My top vent was around 1/3 open. It was also a cool day (45 degrees) with a little rain (everything was covered). Not sure if the weather conditions helped keep things low, but I don't think it hurt.
