Chicken thighs stuffed with artichoke/spinach dip

Bought these from Bergeron's, a local Cajun meats store.

Boneless, wrapped in bacon, stuffed with a very good spinach-artichoke dip.

They went well with grilled asparagus, mushrooms (on the fire-wire), and bok choy.
