Chicken & Ribs ???

I'm thinking of cooking chicken lg. qtrs (5 pieces), and St louis spare Ribs (1 rack),at the same time. I have done the mod (increased capicity),per the website adding lower grate to the upper grate with bolts nuts etc.)

My family likes the chicken cooked with no water pan high heat, even the fussy ones.That being said.

Question is how would you cook both the chicken and the spares at the same time ?

I'm afraid cooking the spare useing the no water pan method will possible make the spares have too much of a smokey flavor. Then there the timing and temp issuse.

I guess I could take a chance and cook with empty foiled water pan at 250-275 adding a little apple wood.


But we like the chicken best high heat no H2O pan.

Any thoughts, advise, tips, etc appreciated.

Start the spare ribs on the top rack and when its time to put the chicken on, put them on the lower rack and crank up the heat some!
