Hello Everyone, firing up the WSM and like to try smoking 4 chicken quarters.........question is temp; low and slow or high and quick (350*)?? Ideas and suggestions?

Or don't use the water pan and have the drippings hit the coals. I flip evey 10-15 min until they are done.

I'm kinda with Tony, hot and fast, and I'd leave the pan out. I've been doing that more and more lately (ever since Tony's ribs post without the pan) and have been loving the results. I think the drippings hitting the coals adds a lot of flavor. In fact I plan on doing chicken, ribs, and sausage with out the pan tomorrow.

I have actually started doing low and slow on some chicken and turkey, I am trying to lose weight and don't eat the skin, which kills me but actually won't.

There is no wrong way.

Pictures!

I did chicken quarters last week. I followed the beginner recipe on here and had good results. My only complaint was going with Perdue chicken. Lol
