I have a bag of chicken quarters to cook this weekend. Want to do something fairly hands-off, since on a WSM it is difficult to cook something like roadside chicken on both grates. Any suggestions??? Thanks!
Rub them with olive oil then hit them with your favorite rub. Smoke roast them at 300-350 if you can get your WSM up there (no water). Skin might be a little crispier. If I can't keep the temps up then I pull it and make sandwiches.
I serve mine with cole slaw and biscuits and BBQ sauce at the table.
I'd go with the pulled chicken. I'm not a huge fan of the steps taken to separate that extra piece at the beginning, or to pull at the end, but it's a good tasty meal.
Use or make your favorite poultry rub and cook at 250-300 for 2-3 hrs. Meat temps don't matter, they will render the fat out and will be sooooo good. Trust me on this method, I do it several times a week!
