Chicken Mole

I stopped at the store to pick up some chicken thighs while making my rounds this afternoon & remembered I had a package of Mole in the cupboard. I've tried nearly every brand I've seen, and this is my favorite:

Added a half a vidalia onion and a chopped red bell pepper:

chopped up nearly 3# boneless/skinless thighs cooked over apple wood & KBB, & mixed it into the sauce to simmer for ~20 minutes:

then into some warmed tortillas with a little leftover rice/barley/sprouted beans from brunch:

Looks very tasty, Clint. Never cooked mole myself but I do enjoy eating it. Love the "Quality Control" photo…one of the best parts of cooking a meal in my opinion.
 
I order it by the case. It's very flavorful, not too hot to me unless I use it and only it for wings. If you're into hot sauces and can find it, try it.

If you can find this sauce try it - there are some in glass jars that need to be reconstituted that are way too salty or aren't just right, this one seems a little plain at first but trust your meat/veggies, they'll finish it off just fine. It comes in a little cardboard container, I forgot to get the pic before I used it.

Maybe I'll try from scratch one day but this is just too easy & good.

A while back, everyone was posting their versions of Mole here, that's what got me searching.
 
Man that does look good! Mole is a time consuming thing to make! Also every time I make it seems to taste different even with the same ingredients!

If you can get your hands on Teloloapan Brand mole paste get some, Dona Maria was a favorite of ours until we tried this one. We have tried the red and green, both are good but we prefer the red.

I'm all over it John! You know, I've never looked for Mole sauce @ the Mexican markets------and I need to go 'cause I'm almost out of my Chef Merito Carne Asada seasoning. Thanks for the rec. I'd have bought it @ amazon but their shipping scales the same as the product.

I'm gonna try making my own too - do you have a good recipe to share? If not, I have a few cookbooks....but if yours is good (and easily accessible/shared), I'll try that first.
