Chicken in Mole: Mom's Recipe

fwiw - this is my Mom's recipe for Chicken in Mole:

2 lbs chicken leg quarters, cut in pieces
5 cups water (I used less)
1/2 tsp chicken bouillon
1/2 med onion – diced

1 8 oz jar “Bueno” brand Mole
Chicken Broth (the water from the boiled chicken or canned)
1/4 tsp ground cumin
1/4 tsp ground pepper
3 cloves garlic – minced
12 saltine cracker crumbs
3 cups cooked rice

Boil chicken in water with the onion & bouillon until chicken is cooked. Shred or chop chicken.

In a large pan, gently heat one cup of chicken broth (simmer), add mole, ground cumin, pepper, garlic & cracker crumbs until mixed. Cook 15 minutes stirring constantly. Thin as necessary with more chicken broth. Add chicken, cover & let stand 15 minutes. Serve over rice.

For those who like hot & sweet mole, add minced jalapeno peppers & semi-sweet chocolate syrup to taste.

Serves 6.

This sounds amazing, another gotta do. I think I need to change my name to Carlos, I'm hooked on these South of the Border dishes
 
I'm giving Chicken Mole a shot next cook. Wish I'd seen this sooner. Thanks Robert, I have it filed away. Looks terrific!

Teloloapan brand is much better than "Bueno" or "Dona Maria". If you use that, all you need to add is chicken broth & maybe a little salt. Saltines are optional. & the chicken.
Don't forget the bed of rice.
