Decided to cook up a couple of bone in chicken breasts on the fire pit. We have a lot of maple and oak firewood for the fire pit and cooked on a mix of both. Both types are in our 4 rows of wood so it’s always a mixed bags anyways. Added small pieces of wood as needed to keep the fire going.
Used a little Pork Barrel BBQ rub on the chicken. The smaller breast took about an hour to get to 160* to 165*, the bigger one was about 1 hour 20 minutes. Moved the smaller one away from the coals to keep it warm until the other one was done. Served with Stubb’s BBQ sauce on the side.
