Chicken breasts on fire pit

Decided to cook up a couple of bone in chicken breasts on the fire pit. We have a lot of maple and oak firewood for the fire pit and cooked on a mix of both. Both types are in our 4 rows of wood so it’s always a mixed bags anyways. Added small pieces of wood as needed to keep the fire going.

Used a little Pork Barrel BBQ rub on the chicken. The smaller breast took about an hour to get to 160* to 165*, the bigger one was about 1 hour 20 minutes. Moved the smaller one away from the coals to keep it warm until the other one was done. Served with Stubb’s BBQ sauce on the side.

Every now and then, we generally crank up a fire to enjoy the evening and have a drink or three! Most outdoor cooking is done on a Weber gas grill, BS griddle, WSM and Smokey Joe.

On Memorial Day weekend, all dinners were cooked outdoors including a breakfast on the fire pit.
