Chicken and Zucchini

My wife was working, my boy was out skating with his buds so it was just me and my daughter for dinner. I’ve been on a chicken roll lately so I grabbed some thighs from the fridge this morning and marinated em for the day in Pappy’s Beer Marinade. I wanted to keep it simple with very little dishes so it was just the chicken and some zucchini. I cut the zuc, tossed it in foil, seasoned with butter, pepper and some Lowery’s and set it on the grill. I used a mix of Kford comp and some of the mesquite I got from my friend. Below are the pics.

The grill cookin away, I got this off Craig’s list for free a few years ago and it works great. It’s not the prettiest grill in the world but it man it can churn out some good grub.

Its funny how some grills seem to do a great job on a particular meat, time after time, no matter what you do. Oh wait, maybe the cook as something to do with it, too!

Toby, i made my first grill in metal shop some 39 years ago and was told it don't matter what the grill looks like, if it makes she-cone like that, keep it!
