Chewy skins

So far i have smoked 2 chickens and 2 turkeys. All turned out amazing, other than the skin was like hard rubber. Is this normal?
 
Yes it is. I assume you cooked them on your WSM 22? If so, then your pit temp was probably 225-275 during the cook. If you want crisp skin, you need to cook at over 300, 350 is even better.
 
Yeah....skin down for 1 hr at high temp, then skin up till done...45 min or so. 330-350 is what i do for chickees
Occassionally it still isnt crispy enough. Occasionally..its too crispy. 15 minutes is a lot too much at 350. Gotta check it.
