I think the weather is gonna cool down just enough here this week in Southern California to get some cheese smoked on the 18 inch. It's the first time in years since I've smoked cheese. I'll be using a Z-Grills tube. Tomorrow is my target day. Wish me luck!
 
Here's the cook from start to end. My first time smoking cheese in a long time, so I just laid a wedge of gouda and some good cheddar on to see how it would come out. Smoked it with applewood pellets in the Zgrills smoke tube for 2 hours. Wrapped up tight now and sitting in the refrigerator for a few weeks.
I'm pretty impressed with starting the pellets using my Milwaukee heat gun. Saw a video on YouTube and decided to try it. It was recommended to put the pellets in the microwave for about a minute and a half. That really helped dry them out and got them started heating. Applied the heat gun at full power for less than a minute and the pellets flashed!. Huston, we have ignition! Let them sit on the charcoal grate of the WSM for a few minutes to ensure they were smoldering well then laid them over for the duration. I will definitely use this method again.20211019_111304.jpg
