Here is another mexican recipe for flank or skirt meat and it's called "Carne Asada" and it is to die for. This is the BBQ meat of choice for us southernern Californians in the Imperial Valley on the 4th of July:

Carne Asada is is as popular as grilling brugers and hot dogs here in SoCal and the meat is sold everywhere.
We do carne asda at least twice or three times each month.
In fact I grilled some up last night...
